Errol’s Salad

Ingredients

Salad

  • 2 handfuls mixed greens
  • 2 handfuls arugula
  • 1/2 bunch green onions
  • 1 avocado peeled and sliced
  • 1/4 cup pumpkins seeds
  • grated parmesan

Dressing

  • 1/2 lemon
  • 4 tbsp extra virgin olive oil
  • 2 gloves crushed garlic
  • 1/2 tsp dijon mustard
  • salt and pepper to taste

Process

  1. Toss all salad ingredients together, leaving a small amount of pumpkin seeds and green onions aside as a pretty topping.
  2. Mix together dressing quickly with a whisk until it emulsifies and looks opaque.
  3. Drizzle dressing over greens and toss.
  4. Sprinkle remaining pumpkin seeds and onions on top and serve.

Tip:

This salad tastes amazing served alongside oven baked salmon
