Garlic Zucchini Bites with Marinara

Ingredients

  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 1/2 cup almond flour
  • 1 large egg
  • 3 teaspoons garlic powder
  • 2 teaspoons paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tbsp Olive oil, for frying
  • 1/2 cup no sugar added marinara sauce

Process

  1. In a shallow bowl, combine almond flour, garlic powder, paprika, salt, and black pepper. Mix well to combine.
  2. In a separate shallow bowl, beat the egg.
  3. Dip each zucchini round into the beaten egg, allowing any excess to drip off, then coat it with the almond flour mixture, pressing gently to adhere. Repeat with all the zucchini rounds.
  4. Heat about 2 tablespoons of olive oil in a large skillet over medium heat.
  5. Once the oil is hot, carefully place the coated zucchini rounds in the skillet in a single layer, making sure not to overcrowd the pan.
  6. Cook the zucchini bites for 3-4 minutes on each side or until they are golden brown and crispy.
  7. Once cooked, transfer the zucchini bites to a paper towel-lined plate to remove any excess oil.
  8. Serve warm with a side of marinara for dipping
