Greek Chopped Salad

Ingredients

  • 1 bag of arugula or chopped romaine
  • 2 medium tomatoes, diced
  • 1 medium cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/2 cup pitted kalamata olives
  • 2 oz feta cheese, crumbled
  • 8-10 mint leaves
  • 1/4 cup chopped parsley
  • 1/4 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 clove of garlic
  • 1/4 tsp dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp freshly ground black pepper

Process

  1. Add the diced tomatoes, cucumber, bell pepper, thinly sliced red onion, and pitted kalamata olives into a mixing bowl.
  2. Crumble the feta cheese and add fresh herbs to the bowl.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic, dijon mustard, salt, and black pepper to make the dressing.
  4. Drizzle the dressing over the chopped veggies and cheese. Add romaine or arugula and toss well to coat everything.

Tip:

We love this chopped salad with our turkey meatballs. You can also substitute the turkey for lamb meatballs.
