Nut & Seed Granola

Perfect for topping on yogurt, smoothies, or enjoying by the handful!

Ingredients

  • 5 cups of nuts and seeds of choice
  • 1 cup raw, unsweetened coconut flakes
  • 1/2 cup flax seeds
  • 1/4 cup olive oil
  • 3 tablespoons melted coconut oil
  • 1 1/2 tablespoon vanilla
  • 1 1/2 tablespoons cinnamon
  • 1 tsp nutmeg
  • 1 tablespoon cardamom (more if you love cardamom)
  • 1 tsp salt (more to taste)
  • 1 tablespoon maple syrup (optional)

Process

  1. Combine all ingredients in a large mixing bowl and toss until nuts are coated with oil and seasonings.
  2. Spread mixture evenly on a parchment-lined sheet pan and bake at 300 (low and slow!) for 40 minutes.

Tips:

  • You can use any mix of nuts and seeds you like or have on hand. Sonja’s favorites are pumpkin seeds, pistachios, slivered almonds, and pecans.
  • Optional: add 2-3 tablespoons tahini for an extra nutty flavor
  • Feel free to substitute cardamom for any other spices. Pumpkin pie seasoning is great in the fall!
