Nutty Snack Bars

A healthy homemade swap for granola bars - which can often be a sneaky spiker.

Ingredients

  • 1/4 cup almond butter
  • 1/8 cup coconut oil
  • 1 tbsp monk fruit
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1/2 teaspoon of vanilla extract
  • 1 egg
  • 1/2 cup coconut flakes
  • 1 cup sliced almonds
  • 1 cup chopped walnuts
  • 1/4 cup sunflower seeds
  • 1/4 cup hemp seeds
  • 1/3 cup sugar-free chocolate chips

Process

  1. Preheat oven to 325°F.
  2. Place a saucepan over medium heat. Add almond butter and coconut oil, stirring until combined. Remove from heat and stir in monk fruit, cinnamon, salt, vanilla extract, and 1 egg.
  3. Stir in coconut, nuts, and seeds. The mixture should be sticky and thick.
  4. Line a 8 x 8 inch baking dish with parchment paper and scoop the mixture into the dish, pressing evenly into the pan.
  5. Sprinkle with chocolate chips and bake for 25-35 minutes. Remove when the mixture is fragrant and starting to crisp a bit.
  6. Let cool completely for a stiffer snack bar, or you can enjoy it a little crumbly and warm out of the oven.
